Unsalted butter for greasing baking dish
4 large eggs;
2 10oz packages of frozen chopped spinach;
1 8oz container of whole milk ricotta cheese;
1 1/2 cups sharp cheddar cheese;
1/2 cup chopped green onions (about 4 onions);
2 tablespoons fresh parsley;
1 tablespoon fresh dill [optional];
salt and pepper to taste;
Preheat oven to 350F;
Butter an 8"x8" square baking dish and set aside.
In a large bowl, beat eggs, salt and pepper with a fork until combined;
Add remaining ingredients to the egg mixture;
Pour the mixture into the baking dish spreading it around evenly;
Bake for 45 minutes;
Remove from oven and let it stand at room temperature for approximately 5 minutes;
Serve and enjoy.
You can use cottage cheese instead of ricotta;
Use fresh spinach instead of frozen by chopping about 2 1/2 cups of spinach, quickly saute or blanch and place in a colander to drain. Squeeze out as much water as possible once the spinach has cooled;
Replace the cheddar with feta or do what we do and add both!
