Spinach Cheese Bake

This is a family favorite and is a must at all family holiday meals. I think I would be disowned if I did not make it every time.

Spinach Cheese Bake




  • Unsalted butter for greasing baking dish

  • 4 large eggs;

  • 2 10oz packages of frozen chopped spinach;

  • 1 8oz container of whole milk ricotta cheese;

  • 1 1/2 cups sharp cheddar cheese;

  • 1/2 cup chopped green onions (about 4 onions);

  • 2 tablespoons fresh parsley;

  • 1 tablespoon fresh dill [optional];

  • salt and pepper to taste;


  1. Preheat oven to 350F;

  2. Butter an 8"x8" square baking dish and set aside.

  3. In a large bowl, beat eggs, salt and pepper with a fork until combined;

  4. Add remaining ingredients to the egg mixture;

  5. Pour the mixture into the baking dish spreading it around evenly;

  6. Bake for 45 minutes;

  7. Remove from oven and let it stand at room temperature for approximately 5 minutes;

  8. Serve and enjoy.


  • You can use cottage cheese instead of ricotta;

  • Use fresh spinach instead of frozen by chopping about 2 1/2 cups of spinach, quickly saute or blanch and place in a colander to drain.  Squeeze out as much water as possible once the spinach has cooled;

  • Replace the cheddar with feta or do what we do and add both!
