Herb Baby Beets with Greens

Herb Baby Beets with Greens




  • 2 cups beet thins;

  • 2 tablespoons vegetable oil;

  • 1/4 cup lemon juice;

  • 1 chopped green onion;

  • 1/2 teaspoon Dill;

  • Salt to taste.  


  1. Wash beets thins;

  2. Heat oil in a heavy pan with a tight fitting lid over medium heat;

  3. Saute onions until they are translucent, about 5 minutes;

  4. Add lemon juice, herbs, and beets, place lid on pan to steam the beets;

  5. Check after 5 minutes, adding a small amount of water if necessary to prevent burning.

  6. Cook until beets are fork tender.

  7. Serve hot and enjoy;
