Braised Whole Baby Beets

Braised Whole Baby Beets




  • 1/4 cup butter

  • 1 pound beet thins or whole baby beets with their greens

  • 1 cups chicken broth/stock

  • 1 tablespoons chopped fresh mint (1 teaspoon dried)

  • 1 tablespoons cider vinegar (non-pasteurized is best)


  1. Melt butter in a skillet over a medium heat;

  2. When it froths, place beet thins into the skillet so that all the root tips rest in one direct and the greens in the other;

  3. Sear in butter until the greens are wilted;

  4. Add chicken broth, cover, and simmer until roots become tender – 5 - 10 minutes depending on the size of the beets;

  5. Turn off the heat and transfer the beets to a serving dish using tongs;

  6. Sprinkle with fresh chopped mint and dress with cider vinegar;

  7. Serve and enjoy.
