Grilled Cheese a la Bill

Grilled Cheese on a cold day with a hot bowl of soup. If that does not say comfort food, I don't know what does.

Grilled Cheese a la Bill




  • 2 slices of a good rustic bread;

  • 1/2 cup chopped arugula;

  • 3/4 cup shredded Gruyere cheese [substitute with your favorite melting cheese];

  • 2 tablespoons butter;


  1. Butter one side of each slice of bread

  2. Add arugula, cheese, and desired fillings to make a sandwich

  3. Grill in in a large heavy skillet over medium heat until the cheese is melted;

  4. Serve and enjoy. Try different combinations of cheeses and fillings.


  • Option 1:
    12 chopped Kalamata olives;
    1 tablespoon mayonnaise, mixed in with olives;

  • Option 2:
    1/4 cup thinly sliced red onion;
    3 or 4 thinly sliced granny smith apple slices [or other tart apple]
