Honestly Delicious Delicata Bake with Curly Kale and Fall Fresh Apples

Ingredients

  • 4 baby delicatas, sliced in rings, seeds removed

  • 1 big bunch curly kale, stems removed, torn into 3" pieces

  • 1 apple, diced

  • 2 tablespoons dried chopped rosemary

  • 2 tablespoons coconut milk

  • 1 tsp soy sauce or Braggs Amino acids

  • 1 clove garlic, minced

  • honey to taste [optional]

  • salt, pepper to taste

Instructions

  1. Place all ingredients in Ziploc bag;

  2. Pour out into buttered 9 x 12 baking dish;

  3. Bake at 350° F for 45 minutes;

  4. Drizzle with honey;

  5. Serve warm.

Options

You could substitute other winter squashes for the delicata, just peel and cube them.
