Baked Carnival Squash with Smoked Bacon and Rosemary

Ingredients

  • 1 quartered Carnival squash

  • 1/2 cup diced bacon

  • 1/2 cup olive oil 

  • 1/2 teaspoon dried rosemary

  • 2 minced garlic cloves

  • 1/5 teaspoon grated fresh nutmeg

  • 1 teaspoon sugar

  • salt and black pepper to taste

Instructions

  1. Preheat the oven to 375° F.

  2. Place squash quarters cut-side up on a shallow baking tray.

  3. Sprinkle with salt and pepper.

  4. Dice the bacon and combine with olive oil, rosemary, garlic, nutmeg and sugar in a bowl.

  5. Divide the mixture among the carnival chunks.

  6. Bake in the middle of the hot oven for 25-30 minutes.
