1 quartered Carnival squash
1/2 cup diced bacon
1/2 cup olive oil
1/2 teaspoon dried rosemary
2 minced garlic cloves
1/5 teaspoon grated fresh nutmeg
1 teaspoon sugar
salt and black pepper to taste
Preheat the oven to 375° F.
Place squash quarters cut-side up on a shallow baking tray.
Sprinkle with salt and pepper.
Dice the bacon and combine with olive oil, rosemary, garlic, nutmeg and sugar in a bowl.
Divide the mixture among the carnival chunks.
Bake in the middle of the hot oven for 25-30 minutes.
