Baked Delicata Squash Rings

Delicata squash is so sweet and delicious that it does not need an elaborate recipe.

Baked Delicata Squash Rings




  • 4 squashes

  • 2 tablespoons melted butter

  • 1 tablespoon olive oil (does not need to be Extra Virgin)

  • 1 tablespoon chopped thyme (fresh is best)

  • salt and pepper to taste


  1. Preheat oven to 425°F

  2. Cut squash into 1/2" thick rounds

  3. Cut around centers to remove the seeds

  4. Place rounds on 2 rimmed baking sheets

  5. Pour the butter and oil over the rings, turning the rings to coat evenly while applying salt and pepper

  6. Bake until "GBD" (Golden, Brown, and Delicious), about 20-30 minutes

  7. Place rings on a serving platter and sprinkle with chopped thyme.

  8. Serve immediately.
